Add 200 g of chopped mushrooms and cook them until they are golden. Finally add 2 tbsp parsley and season with salt and pepper to taste. Reserve and let cool
In a hot skillet, sear the steak (suggested, tenderloin) over high heat until golden brown on all sides and let it cool completely.
Spread a puff pastry on a sheet of transparent film and add 100 g of ham slices. Then spread the mushroom mixture over the ham. Place the beef fillet in the center and spread the top with 2 teaspoons Dijon mustard.
Use the sheet of plastic wrap to help you wrap the ham and mushrooms around the fillet, forming a tight cylinder. Then refrigerate it for 20-30 minutes to keep its shape. Preheat the oven to 200°C. In the preheated oven for approximately 35-40 minutes or until the pastry is golden and crispy and the meat reaches the desired level of doneness (it may be more or less time depending on the thickness of the meat and your cooking preferences).

In the same skillet, add another tbsp of olive oil. Toss in the sliced mushrooms and sauté until they are browned and tender. Remove & set aside.
In the same skillet, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Sprinkle the flour into the skillet and whisk it into the butter. Cook for 2 minutes & gradually pour in the broth while continuously whisking to avoid lumps. Let the gravy simmer and thicken for about 3-4 minutes.
Pour in the heavy cream and stir to combine. Simmer until the gravy reaches your desired consistency. Return the sautéed mushrooms to the gravy and stir to combine. Place the rested flat steaks on serving plates and generously ladle the mushroom gravy over them.
